Tattler Summer 2015 47 Wine Club At the time of writing, it has almost been exactly 12 months since new Club Chief Executive Dale St George joined the Tattersall’s family. It is clear that he, along with our Tattersall’s Club Committee have made working and assisting the various Sub Clubs in their roles a priority. This has been very much appreciated and it is great to see the way that all parties are working together. On behalf of the Wine Club, we thank Dale for the friendly working partnership he has encouraged. We aim to tantalise readers with the antics of the Wine Club and what better way than with a report on our August dinner with Queensland’s multi award winning winery; Symphony Hill. Their extraordinarily enthusiastic owner and winemaker/viticulturist Ewan McPherson was our welcome guest. Ewan and his chief winemaker, Mike Hayes have elevated Symphony Hill to a gold medal and trophy winning standard with their hard work and attention to detail, both in the winery and the vineyard. For our Members delectation, we enjoyed a range of their wines, including their much vaunted Reserve Petit Verdot and their Reserve Lagrein (a northern Italian red variety). The last two wines are sold at cellar door for $65 and $95 per bottle respectively and were heavily subsidised for the purpose of sharing them on the night. A menu to delight even the most discerning gourmand was crafted for us by Sous Chef Peter Dalmer. Canapés featured the classic oyster; entrée the classic fried whiting fillets; main was lamb shanks on a sweet potato mash and finally a crème caramel for dessert. Many of our partners were delighted at the final dish, a dessert rather than the more commonly served cheese dish. A group of 40 of our Members, their partners and friends enjoyed the fare on this memorable evening. September housed our only black tie fine wine dinner scheduled for this year and what a night it was. Five courses, seven wines, magnificent food and wines of note are the key elements of this function. It is the intention of the Wine Club to serve only those wines that have been especially acquired and cellared in our temperature controlled cabinets on these nights. Tristan Brownson and Mike Dening at Symphony Hill Dinner. preserved lemon and onion tartlet, served with Non-Vintage Arras; lime and chilli dusted calamari with Killikanoon Mort’s Block Rielsing and Coldstream Hills Chardonnay; main was confit of duck – 2009 Felton Road Bannockburn Pinot Noir paired with 2009 St Hallet Blackwell Shiraz. Southcape triple cream brie was paired with 08 Sandleford Reserve Margaret River Cabernet and finally dessert was served; a Tiramisu with 2012 Noble Viognier. A total of 60 Members, partners and guests joined together on this night and had a wonderful time. Continuing on our program of support for Sportsman’s Grill Nights, Tattersall’s Wine Club Members had the pleasure of attending the September Grill Night featuring the much-awarded Queensland trainer, Robert Heathcote. The Wine Club will continue to provide opportunities to attend Sportsman’s Grill Nights with a special wine package made available to Members at a mere $15 above the Club ticket price of $95, thus $110 for the night’s food, wine and entertainment. A special price for guests is being considered to allow our Members to bring friends and colleagues and for mixed evenings, partners. The pricing adjustment has to be considered because the subsidy embedded in the Members offer is based on their support of the Club and ongoing Membership.
