36 Tattler Summer 2015 Food and Beverage News Michael Akhavan In August Tattersall’s Club welcomed new Food and Beverage Manager, Michael Akhavan to the Tattersall’s Club team. In recent months he has also taken over the cellar and will now manage the Cellarmaster duties. His extensive international experience in fine dining will bring to Tattersall’s Club’s dining areas a new lease of life and his particular focus to customer service will ensure Members, partners and guests will always enjoy exceptional service and fine culinary experiences. Name: Michael Akhavan Position: Food and Beverage Manager Previous Experience: Immediately prior to Tattersall’s Club I worked in the same position of Food and Beverage Manager at the Brisbane Polo Club for five and a half years and was the Operations Manager and part of the opening team of Gianni Events at Portside, now Moda Events. I am a seasoned hospitality and tourism operative with 25 years of experience, starting from the bottom in my home country of Austria. I honed and expanded my skill-set over the years with diligent training, genuine interest and passion and plenty of on-the-job experience. I pay particular attention to customer service and am educated in all aspects of food and beverage operations including bar-tending, sommelier, banquets and catering, front desk, concierge, venue and facilities management. My experience spans the globe including positions held in Austria, France, Germany, Switzerland, London, New York, international Cruise Ships and Australia, which has provided me with a well rounded cultural approach to fine dining. What drew you to Tattersall’s Club? The great reputation and very similar environment Tattersall’s Club has to the Brisbane Polo Club. How do you think Tattersall’s Club dining stands up against other dining experiences in Brisbane? It is the last bastion of good old world charm and fine dining. The unique facilities and building certainly make it stand out. Together with a dedicated culinary team (kitchen) and exemplary front of house staff great things can be achieved. I see myself ideally suited to the environment and particularities of a Private Membership Club where the prime objective is to provide the best service and experience possible to our valued Members. What do you hope to bring to the Food and Beverage Department of Tattersall’s? With my extensive experience and European background I hope to bring that certain pizzazz and freshness to the dining areas within the Club. As well as restructuring the beverage portfolio and wine list to bring it to more contemporary standards. What will be your main focus over the next six months? My main focus is to get to know my team and identify their key strengths and abilities, which will in turn enable me to start building and further nurturing the collective environment as a whole. What will be your main focus over the next year? Overall improvements of the entire department on many different levels, ranging from product design, customer service standards to facility layout, safety and efficiency. Bringing out specific skillsets and knowledge and increasing profitability.
